Extra-virgin olive oil comes from virgin oil production only, contains no more than 0.8% acidity, and is judged to have a superior taste.Three countries are the major olive oil producers in the world, Greece, Spain and Italy. Together, they produce more than 75% of the world production.
Extra Virgin olive oil accounts for less than 10% of oil in all producing countries. The percentage is far higher in Greece with 80%, Italy 45% and Spain 30%.
I got a few pictures from the whole extraction process. Lets start:
1st You have to climb the tree
2nd You use a brush to get the olives
3rd You collect them and you clean them
4th You put them in to a bag
5th You must have a strong back
6th You go to the mill factory
7th First cleaning from the leaves
8th Second cleaning with water
9th Grinding
10th The first filtering
11th Second filtering with centrifugal power
12th Extra virgin olive oil

Our olive oil acidity was 0.5%! Not to bad!
